We are looking for an Experienced Catering Manager being sourced to head up the team of chefs and kitchen assistants within a High-end Early year’s company.

 

Reporting to the Head of Facilities Management, you will be responsible for the day-to-day catering operations, quality of food served, budget control and performance of the team.

 

Outline Person

 

  • The right candidate with have worked in kitchens or come from a hospitality background with a proved record of leading large successful teams.
  • Providing a hands-on and a ‘lead by example’ approach wherever required to train staff, assist colleagues, and carry out duties. Happy to roll up your sleeves and put In a shift In the kitchen.
  • Excellent communication and Interpersonal skills – Ability to engage with staff and suppliers to get results across many mediums in a range of diverse environments.
  • Organised with and strong levels of time management – Must be able to evaluate and prioritise given conflicting workload and events In the commercial grade kitchens
  • Commercial acumen and awareness of how Catering and Educational Businesses are structured.
  • Strong level of IT competence
  • Knowledge of food standards, food Hygiene, hazard analysis, critical control, care plans and food preparation
  • Attention to detail.

 

Staff Management & Recruitment

 

  • Daily management of staff rotas and bank support network
  • Management of Sickness, Holiday and covering shifts in live time to ensure dietary requirements are met daily.
  • Performance and Absence Management In general
  • Developing and sustaining a culture of excellent customer service through feedback, training, and quality standards.
  • Work with our Recruitment and Admissions team to ensure permanent and bank vacancies are planned for and demand met.
  • Induct and train staff members to the expected standards – Ensuring staff undertake regular periodic training In line with the companies’ mandatory packages.

 

Quality, Auditing & Administration

 

  • To attend sites and undertake formal Inspections and audits on the full catering piece being offered.
  • Drive the quality of the team with training, support, and regular site visits. Keep the team engaged and working to consistent levels of food delivery.
  • Monitor near misses and allergen breaches – Read trends, follow performance management processes to mitigate risk.
  • Ensure that Kitchen Manuals are kept In good order – High levels of administration and archiving In line with company process.
  • Review and renew regulatory requirements, posters, and insurances.
  • Produce reports and analytics to feed back to the business.

 

Budgets, Ordering & Menus

 

  • To work with the Senior Management team and external nutritional experts to plan, review and adapt seasonal menus.
  • Strategise and proactively look for ways to reduce cost but maintain or improve the quality of the meals we provide.
  • Monitor and authorise food and beverage spend through our existing platform. Monitor stock and wastage at site level.

 

 

Health, Safety & Maintenance

 

  • Aware of COSHH and the materials that can be used within the catering environments.
  • Review Risk Assessments and undertake tall box talks.
  • Work with stakeholders to ensure that we have hygienic and fully functioning kitchens.
  • Drive standards and ensure that External reviews by the EHO receive 5 Star ratings
